[ APPLE & COCONUT CRUMBLE ]

So, I’m all about winging my creations, sometimes it works, other times…not so much! But this one you’ll definitely be thanking me later for.

Ingredients

6-8 large apples

Enough boiling water to almost cover your apples

5 tablespoon of raw sugar

1 cup of coconut flakes

¾ cup desiccated coconut

¼ cup of chia seeds

1 cup of oats

1 ½ cups of almond or hazelnut meal (or super ground nuts of your choice)

3 tablespoons of malt syrup (if you’re not being all good and natural use maple syrup)

2 tablespoons of honey

1 tablespoon of coconut butter

What to do

Preheat oven to 180 fan forced

Peel, roughly chop and boil your apples in the pot of water (either on the stove or in the microwave if you’re lazy)

Once your apples are soft, drain them and mix in 1 tablespoon of your raw sugar while they’re still piping hot

Mix ALL YOUR INGREDIENTS in a large bowl and spread out evenly on a baking tray

Throw the tray in the oven until almost golden. I don’t time things, just look at it and you’ll know when it’s ready

DON’T let your mixture get golden; you’ll be putting it back in the oven

Once that’s ready, pour half of your delicious muesli  mix in a baking dish and press it down hard

Spread out your apples on top

Finish by pouring the remaining half of your mixture on top and again pressing it down hard (optional to drizzle more malt syrup on top, like I had to tell you twice)

Bake again baby

Really sorry, you’re gonna have to use your eyes again to tell when it’s ready!

EAT!

Have it for breaky (its oats and apple after all) or sneak some ice-cream and have it for dessert. Winner.
